  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • BBQ sauce - 100 grams (gluten-free)
  • Gluten-free slider buns - 4
  • Coleslaw mix - 100 grams
  • Mayonnaise - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon

Steps

  1. Preheat your oven to 150°C (300°F).
  2. Score the skin of the pork belly in a crisscross pattern, then rub it with salt, black pepper, smoked paprika, garlic powder, and onion powder.
  3. Place the pork belly on a baking tray, skin side up, and roast it in the preheated oven for about 60-75 minutes, or until the skin is crispy and the meat is tender.
  4. Remove the pork belly from the oven and let it rest for 10 minutes before slicing into bite-sized pieces.
  5. While the pork belly is resting, prepare the coleslaw by mixing the coleslaw mix, mayonnaise, and apple cider vinegar in a bowl. Set aside.

  7. Toss the sliced pork belly in the warmed BBQ sauce until well coated.
  8. To assemble the sliders, place a spoonful of the BBQ pork belly on each gluten-free slider bun, top with a generous spoonful of coleslaw, and close the buns.
