Ingredients

  • Fresh pineapple - 200 grams, peeled and diced
  • Olive oil - 1 tablespoon
  • BBQ sauce - 3 tablespoons
  • Red onion - 50 grams, thinly sliced
  • Red bell pepper - 50 grams, thinly sliced
  • Corn tortillas - 4 small
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a mixing bowl, toss the diced pineapple with olive oil, salt, and black pepper.
  3. Grill the pineapple for about 5-7 minutes, turning occasionally, until caramelized and tender.
  4. In the same grill, add the sliced red onion and bell pepper, grilling for another 3-4 minutes until softened.
  5. Once the vegetables are done, remove them from the grill and mix them with the grilled pineapple and BBQ sauce in a bowl.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.
  7. Assemble the tacos by placing the BBQ pineapple mixture onto each tortilla.
  8. Top with fresh cilantro and serve with lime wedges on the side.
