- Fresh pineapple - 200 grams, peeled and diced
- Olive oil - 1 tablespoon
- BBQ sauce - 3 tablespoons
- Red onion - 50 grams, thinly sliced
- Red bell pepper - 50 grams, thinly sliced
- Corn tortillas - 4 small
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat a grill or grill pan over medium-high heat.
- In a mixing bowl, toss the diced pineapple with olive oil, salt, and black pepper.
- Grill the pineapple for about 5-7 minutes, turning occasionally, until caramelized and tender.
- In the same grill, add the sliced red onion and bell pepper, grilling for another 3-4 minutes until softened.
