Ingredients

  • Fresh pineapple - 1 medium (about 900g)
  • BBQ sauce - 100ml
  • Olive oil - 1 tablespoon (15ml)
  • Cinnamon - 1 teaspoon (5g)
  • Brown sugar - 2 tablespoons (30g)
  • Lime juice - 1 tablespoon (15ml)
  • Chopped fresh cilantro - 2 tablespoons (8g)

Steps

  1. Preheat the grill to medium-high heat.
  2. Peel and core the pineapple, then cut it into thick rings (about 1.5 cm each).
  3. In a small bowl, mix the BBQ sauce, lime juice, and brown sugar until well combined.
  4. Brush the pineapple rings with olive oil on both sides and sprinkle with cinnamon.
  5. Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, until grill marks appear and the pineapple is slightly caramelized.
  6. During the last minute of grilling, brush the BBQ glaze on both sides of the pineapple rings.
  7. Remove the grilled pineapple from the grill and let it cool for a minute.
  8. Garnish with chopped cilantro before serving.
