Ingredients

  • Portobello mushrooms - 200 grams
  • Olive oil - 1 tablespoon
  • BBQ sauce - 4 tablespoons
  • Corn tortillas - 4 pieces
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Clean the Portobello mushrooms and remove the stems.
  3. Brush the mushrooms with olive oil and season with salt and pepper.
  4. Place the mushrooms on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  5. During the last 2 minutes of grilling, brush the mushrooms with BBQ sauce.
  6. While the mushrooms are grilling, warm the corn tortillas on the grill for about 30 seconds on each side until soft.
  7. Remove the mushrooms from the grill and slice them into strips.
  8. Assemble the tacos by placing the grilled mushroom strips on each tortilla, topping with sliced avocado and chopped cilantro.
  9. Serve the tacos with lime wedges on the side for squeezing over the top.
