Ingredients

  • Flatbread - 2 pieces
  • Mushrooms (cremini or portobello) - 250 grams, sliced
  • BBQ sauce - 100 ml
  • Red onion - 1 small, thinly sliced
  • Bell pepper (any color) - 1 medium, thinly sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh cilantro or parsley - for garnish
  • Salt - to taste
  • Pepper - to taste
  • Cheese (mozzarella or vegan) - 100 grams, shredded

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the sliced mushrooms, red onion, and bell pepper to the skillet. Season with salt and pepper. Cook for about 5-7 minutes until the mushrooms are tender and the vegetables are slightly caramelized.
  4. Remove the skillet from heat and stir in the BBQ sauce until the mushrooms and vegetables are well coated.
  5. Place the flatbreads on a baking sheet. Evenly distribute the BBQ mushroom mixture on top of each flatbread.
  6. Sprinkle the shredded cheese over the mushroom mixture.
  7. Bake in the preheated oven for 10-12 minutes, or until the flatbreads are crispy and the cheese is melted.
  8. Remove from the oven, garnish with fresh cilantro or parsley, slice, and serve hot.
