BBQ Lentil Sliders

- Brown lentils - 100 grams
- Water - 250 ml
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, grated
- BBQ sauce - 50 grams
- Breadcrumbs - 30 grams
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
Steps
- Rinse the brown lentils under cold water and place them in a saucepan with 250 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until lentils are tender.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
- Once the lentils are cooked, drain any excess water and mash them in a bowl. Stir in the sautéed onion and garlic, grated carrot, BBQ sauce, breadcrumbs, cumin, paprika, salt, and black pepper until well combined.
- Form the mixture into 2 patties and refrigerate for 10 minutes to help them firm up.
- While the patties are chilling, preheat a non-stick skillet over medium heat. Cook the lentil patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
- Toast the burger buns in the same skillet until lightly browned.
- Assemble the sliders by placing a lettuce leaf on the bottom half of each bun, followed by a lentil patty and a slice of tomato. Top with the other half of the bun and serve immediately.
