- Brown lentils - 100 grams
- Water - 500 ml
- Carrot - 1 medium, finely grated
- Celery - 1 stalk, finely chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Rolled oats - 50 grams
- Ground flaxseed - 1 tablespoon
- BBQ sauce - 4 tablespoons
- Soy sauce - 1 tablespoon
- Dried thyme - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- Rinse the brown lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onions, garlic, carrots, and celery, and sauté for about 5-7 minutes until softened.
- In a large bowl, combine the cooked lentils, sautéed vegetables, rolled oats, ground flaxseed, BBQ sauce, soy sauce, thyme, smoked paprika, salt, and pepper. Mix well until fully combined.
- Transfer the mixture to a loaf pan and press it down evenly.
- Spread an additional tablespoon of BBQ sauce on top of the loaf.
- Bake in the preheated oven for 30-35 minutes, or until firm and slightly browned on top.
- Let the loaf cool for a few minutes before slicing and serving.
