Ingredients

  • Brown lentils - 100 grams
  • Water - 500 ml
  • Carrot - 1 medium, finely grated
  • Celery - 1 stalk, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Rolled oats - 50 grams
  • Ground flaxseed - 1 tablespoon
  • BBQ sauce - 4 tablespoons
  • Soy sauce - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Rinse the brown lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add onions, garlic, carrots, and celery, and sauté for about 5-7 minutes until softened.
  4. In a large bowl, combine the cooked lentils, sautéed vegetables, rolled oats, ground flaxseed, BBQ sauce, soy sauce, thyme, smoked paprika, salt, and pepper. Mix well until fully combined.
  5. Transfer the mixture to a loaf pan and press it down evenly.
  6. Spread an additional tablespoon of BBQ sauce on top of the loaf.
  7. Bake in the preheated oven for 30-35 minutes, or until firm and slightly browned on top.
  8. Let the loaf cool for a few minutes before slicing and serving.
