- Brown lentils - 1 cup (250g), cooked and drained
- Breadcrumbs - 1/2 cup (50g)
- BBQ sauce - 1/4 cup (60ml)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 tsp
- Smoked paprika - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Egg - 1 large
- Olive oil - 1 tbsp
- Whole wheat burger buns - 2
- Leafy greens (lettuce or spinach) - 1 cup
- Tomato - 1, sliced
Steps
- In a large bowl, combine the cooked lentils, breadcrumbs, BBQ sauce, chopped onion, minced garlic, cumin, smoked paprika, salt, black pepper, and egg.
- Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into 2 equal-sized patties.
- Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for 5-7 minutes on each side, or until golden brown and heated through.
- While the patties cook, toast the whole wheat burger buns on a separate skillet or in the oven.
- Assemble the burgers by placing each lentil patty on a bun, topping with leafy greens and tomato slices.
- Drizzle additional BBQ sauce on top if desired, and serve immediately.
