Ingredients

  • Brown lentils - 1 cup (250g), cooked and drained
  • Breadcrumbs - 1/2 cup (50g)
  • BBQ sauce - 1/4 cup (60ml)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 tsp
  • Smoked paprika - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Egg - 1 large
  • Olive oil - 1 tbsp
  • Whole wheat burger buns - 2
  • Leafy greens (lettuce or spinach) - 1 cup
  • Tomato - 1, sliced

Steps

  1. In a large bowl, combine the cooked lentils, breadcrumbs, BBQ sauce, chopped onion, minced garlic, cumin, smoked paprika, salt, black pepper, and egg.
  2. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  3. Form the mixture into 2 equal-sized patties.
  4. Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for 5-7 minutes on each side, or until golden brown and heated through.
  5. While the patties cook, toast the whole wheat burger buns on a separate skillet or in the oven.
  6. Assemble the burgers by placing each lentil patty on a bun, topping with leafy greens and tomato slices.
  7. Drizzle additional BBQ sauce on top if desired, and serve immediately.
