- Lamb shanks - 2 pieces (about 1 kg total)
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato paste - 2 tablespoons
- Chicken broth - 250 ml
- BBQ sauce - 100 ml (kosher)
- Dried rosemary - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Red wine - 100 ml (optional)
- Fresh parsley - for garnish
Steps
- Preheat your oven to 160°C (320°F).
- In a large oven-safe pot, heat the olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then sear them in the pot until browned on all sides, about 5-7 minutes. Remove the shanks and set aside.
- In the same pot, add the minced garlic, diced onion, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the tomato paste, and cook for an additional 2 minutes. Pour in the red wine, if using, and let it simmer for 3 minutes to reduce slightly.
- Add the chicken broth, BBQ sauce, dried rosemary, and dried thyme to the pot. Stir well to combine.
- Return the lamb shanks to the pot, ensuring they are submerged in the sauce. Bring the mixture to a gentle simmer.
- Cover the pot with a lid and transfer it to the preheated oven. Cook for 2 to 2.5 hours, or until the lamb is tender and falling off the bone.
- Once cooked, remove the pot from the oven and let it rest for 10 minutes before serving. Garnish with fresh parsley.
