Ingredients

  • Lamb shanks - 2 pieces (about 1 kg total)
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Chicken broth - 250 ml
  • BBQ sauce - 100 ml (kosher)
  • Dried rosemary - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Red wine - 100 ml (optional)
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a large oven-safe pot, heat the olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then sear them in the pot until browned on all sides, about 5-7 minutes. Remove the shanks and set aside.
  3. In the same pot, add the minced garlic, diced onion, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.
  4. Stir in the tomato paste, and cook for an additional 2 minutes. Pour in the red wine, if using, and let it simmer for 3 minutes to reduce slightly.
  5. Add the chicken broth, BBQ sauce, dried rosemary, and dried thyme to the pot. Stir well to combine.
  6. Return the lamb shanks to the pot, ensuring they are submerged in the sauce. Bring the mixture to a gentle simmer.
  7. Cover the pot with a lid and transfer it to the preheated oven. Cook for 2 to 2.5 hours, or until the lamb is tender and falling off the bone.
  8. Once cooked, remove the pot from the oven and let it rest for 10 minutes before serving. Garnish with fresh parsley.
