Ingredients

  • Canned young green jackfruit in brine - 400 grams
  • BBQ sauce - 120 ml
  • Olive oil - 1 tablespoon
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Slider buns - 4 pieces
  • Coleslaw mix - 1 cup
  • Vegan mayonnaise - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - a handful, chopped (optional)

Steps

  1. Drain and rinse the jackfruit thoroughly under cold water, then use your hands to shred the jackfruit into pieces, removing any seeds.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing for 3-4 minutes until softened.
  3. Add the shredded jackfruit to the skillet along with the ground cumin, smoked paprika, salt, and black pepper. Stir well to combine.
  4. Pour in the BBQ sauce, mixing everything well. Reduce heat to low and let it simmer for about 15 minutes, stirring occasionally until heated through and slightly caramelized.
  5. While the jackfruit is cooking, prepare the coleslaw by mixing the coleslaw mix, vegan mayonnaise, and lemon juice in a bowl. Season with salt and pepper to taste.
  6. To assemble the sliders, place a generous portion of the BBQ jackfruit on the bottom half of each slider bun, top with coleslaw, and sprinkle with fresh cilantro if desired. Place the top half of the bun on each slider.
