  • young green jackfruit - 400 grams
  • barbecue sauce - 120 ml
  • olive oil - 1 tablespoon
  • onion - 1 medium, diced
  • garlic - 2 cloves, minced
  • cumin - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • water - 100 ml
  • burger buns - 2
  • cabbage - 100 grams, shredded
  • carrot - 1 medium, grated
  • vegan mayonnaise - 2 tablespoons
  • apple cider vinegar - 1 tablespoon
  • maple syrup - 1 teaspoon

Steps

  1. Drain and rinse the canned jackfruit, then cut off the core and shred the remaining pieces into 'pulled' strands.
  2. In a large skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the shredded jackfruit to the skillet along with cumin, smoked paprika, salt, and black pepper. Stir well to combine.
  4. Pour in the barbecue sauce and water, mixing until everything is well-coated. Reduce heat to low and let simmer for about 15 minutes, stirring occasionally.
  5. While the jackfruit simmers, prepare the coleslaw by combining shredded cabbage, grated carrot, vegan mayonnaise, apple cider vinegar, and maple syrup in a bowl. Mix well and set aside.
  6. Once the jackfruit is tender and infused with barbecue flavor, remove from heat.
  7. To serve, pile the BBQ jackfruit onto the bottom half of each burger bun, top with coleslaw, and place the other half of the bun on top.
