  • Pizza dough - 200 grams
  • Canned young green jackfruit in brine - 400 grams, drained and rinsed
  • BBQ sauce - 100 grams
  • Olive oil - 1 tablespoon
  • Red onion - 1 small, thinly sliced
  • Bell pepper - 1 medium, thinly sliced
  • Corn kernels - 100 grams (fresh or frozen)
  • Vegan cheese - 100 grams, shredded
  • Fresh cilantro - a handful, chopped (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a skillet, heat olive oil over medium heat. Add the drained jackfruit and cook for about 5-7 minutes, stirring occasionally.
  3. Add the BBQ sauce to the jackfruit, season with salt and black pepper, and cook for an additional 5 minutes until the jackfruit is heated through and coated in sauce.
  4. While the jackfruit cooks, roll out the pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled dough onto a pizza stone or baking sheet lined with parchment paper.
  6. Spread a thin layer of BBQ sauce over the base of the pizza dough.
  7. Evenly distribute the BBQ jackfruit mixture over the pizza base.
  8. Add the sliced red onion, bell pepper, and corn kernels on top of the jackfruit.
  9. Sprinkle the vegan cheese evenly over the toppings.
  10. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese has melted.
