- Eggplant - 1 large (about 400g)
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sugar-free BBQ sauce - 1/4 cup
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat the grill to medium-high heat (about 200°C or 400°F).
- Slice the eggplant into 1-inch thick steaks, discarding the ends.
- In a small bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Brush both sides of the eggplant steaks with the olive oil mixture.
- Place the eggplant steaks on the grill and cook for about 5-7 minutes on each side, until they are tender and have grill marks.
- During the last 2 minutes of cooking, brush the BBQ sauce onto both sides of the eggplant steaks.
- Remove the steaks from the grill and let them rest for a couple of minutes.
- Garnish with chopped fresh parsley and serve immediately.
