Ingredients

  • Eggplant - 1 large (about 400g)
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sugar-free BBQ sauce - 1/4 cup
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the grill to medium-high heat (about 200°C or 400°F).
  2. Slice the eggplant into 1-inch thick steaks, discarding the ends.
  3. In a small bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  4. Brush both sides of the eggplant steaks with the olive oil mixture.
  5. Place the eggplant steaks on the grill and cook for about 5-7 minutes on each side, until they are tender and have grill marks.
  6. During the last 2 minutes of cooking, brush the BBQ sauce onto both sides of the eggplant steaks.
  7. Remove the steaks from the grill and let them rest for a couple of minutes.
  8. Garnish with chopped fresh parsley and serve immediately.
