- Olive oil - 2 tablespoons

- Ricotta cheese - 100g
- Mozzarella cheese - 100g, shredded
- Parmesan cheese - 30g, grated
- Fresh basil - 1/4 cup, chopped
- Garlic - 1 clove, minced
- BBQ sauce - 1/2 cup
- Pine nuts - 2 tablespoons, toasted
Steps
- Preheat your oven to 190°C (375°F).
- Slice the eggplant lengthwise into 1/4 inch thick slices. Sprinkle with salt and let them sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat dry with a paper towel. Brush both sides with olive oil and season with black pepper.
- Grill the eggplant slices on a preheated grill or grill pan for about 3-4 minutes on each side until they are tender and have grill marks. Remove from heat.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella, parmesan cheese, chopped basil, minced garlic, and pine nuts. Mix until well combined.
- Spread a thin layer of the cheese mixture on each grilled eggplant slice and roll them up tightly.
- Place the rollatini seam-side down in a baking dish. Pour BBQ sauce evenly over the rolls and sprinkle the remaining mozzarella on top.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let the dish cool for a few minutes before serving. Garnish with additional fresh basil if desired.
