Ingredients

  • Eggplant - 1 large (about 300g)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ricotta cheese - 100g
  • Mozzarella cheese - 100g, shredded
  • Parmesan cheese - 30g, grated
  • Fresh basil - 1/4 cup, chopped
  • Garlic - 1 clove, minced
  • BBQ sauce - 1/2 cup
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Slice the eggplant lengthwise into 1/4 inch thick slices. Sprinkle with salt and let them sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat dry with a paper towel. Brush both sides with olive oil and season with black pepper.
  4. Grill the eggplant slices on a preheated grill or grill pan for about 3-4 minutes on each side until they are tender and have grill marks. Remove from heat.
  5. In a mixing bowl, combine ricotta cheese, half of the mozzarella, parmesan cheese, chopped basil, minced garlic, and pine nuts. Mix until well combined.
  6. Spread a thin layer of the cheese mixture on each grilled eggplant slice and roll them up tightly.
  7. Place the rollatini seam-side down in a baking dish. Pour BBQ sauce evenly over the rolls and sprinkle the remaining mozzarella on top.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Let the dish cool for a few minutes before serving. Garnish with additional fresh basil if desired.
