Ingredients

  • Eggplant - 1 large (about 300g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • BBQ sauce - 1/4 cup
  • Goat cheese - 100g, crumbled

Steps

  1. Preheat your grill or barbecue to medium-high heat.
  2. Slice the eggplant lengthwise into 1/4 inch thick strips and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  3. Pat the eggplant strips dry with a paper towel and brush both sides with olive oil.
  4. In a small bowl, mix the minced garlic, chopped parsley, chopped basil, smoked paprika, salt, and black pepper.
  5. Spread a thin layer of the herb mixture on one side of each eggplant strip.
  6. Place a small amount of crumbled goat cheese at one end of each strip, then roll them up tightly.
  7. Secure each roll with a toothpick if necessary, and brush the outside with a little more olive oil.
  8. Grill the roll-ups for about 10 minutes, turning occasionally, until they are tender and have grill marks.
  9. Remove from the grill and brush with BBQ sauce before serving.
