Ingredients

  • Eggplant - 1 medium (approximately 300 grams)
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • BBQ sauce (low sugar) - 4 tablespoons
  • Fresh parsley (for garnish) - 1 tablespoon

Steps

  1. Preheat your grill to medium-high heat.
  2. Slice the eggplant into 1/2-inch thick rounds and place them in a large bowl.
  3. In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
  4. Pour the olive oil mixture over the eggplant slices and toss until evenly coated.
  5. Place the eggplant slices on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  6. During the last few minutes of grilling, brush the eggplant with the low-sugar BBQ sauce.
  7. Remove the eggplant from the grill and let it rest for a couple of minutes.
  8. Serve the BBQ eggplant garnished with fresh parsley.
