- Black pepper - 1/2 teaspoon
- BBQ sauce (low sugar) - 4 tablespoons
- Fresh parsley (for garnish) - 1 tablespoon
Steps
- Preheat your grill to medium-high heat.
- Slice the eggplant into 1/2-inch thick rounds and place them in a large bowl.
- In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
- Pour the olive oil mixture over the eggplant slices and toss until evenly coated.
- Place the eggplant slices on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
