- Chicken breast - 300 grams
- Mixed salad greens - 150 grams
- Cherry tomatoes - 100 grams
- Cucumber - 1 medium, sliced
- Red onion - 1/4, thinly sliced
- Corn (canned or cooked) - 100 grams
- Black beans (canned, rinsed) - 100 grams
- BBQ sauce - 50 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 medium, sliced
- Lime - 1, juiced
Steps
- Preheat the grill or a grill pan over medium-high heat.
- Season the chicken breasts with salt, black pepper, and half of the BBQ sauce.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C. Remove from grill and let it rest.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, corn, and black beans.
- Slice the grilled chicken into strips and add it to the salad mixture.
- Drizzle the remaining BBQ sauce and olive oil over the salad. Toss gently to combine.
