Ingredients

  • Chicken breast - 300 grams
  • Mixed salad greens - 150 grams
  • Cherry tomatoes - 100 grams
  • Cucumber - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Corn (canned or cooked) - 100 grams
  • Black beans (canned, rinsed) - 100 grams
  • BBQ sauce - 50 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 medium, sliced
  • Lime - 1, juiced

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Season the chicken breasts with salt, black pepper, and half of the BBQ sauce.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C. Remove from grill and let it rest.
  4. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, corn, and black beans.
  5. Slice the grilled chicken into strips and add it to the salad mixture.
  6. Drizzle the remaining BBQ sauce and olive oil over the salad. Toss gently to combine.
  7. Serve the salad topped with sliced avocado and a squeeze of fresh lime juice.
