- Cooked chicken breast, shredded - 200 grams
- BBQ sauce - 100 ml
- Flour tortillas - 4 pieces (20 cm diameter)
- Shredded cheddar cheese - 100 grams
- Shredded mozzarella cheese - 100 grams
- Olive oil - 2 tablespoons
- Green onions, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine the shredded chicken with BBQ sauce, mixing well to ensure the chicken is evenly coated.
- Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Place one flour tortilla in the skillet and layer half of the shredded cheddar and mozzarella cheese on one side of the tortilla.
- Add half of the BBQ chicken mixture on top of the cheese and sprinkle with chopped green onions.
- Fold the tortilla over to create a half-moon shape and cook for 3-4 minutes until the underside is golden brown.
- Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side until the cheese is melted and the quesadilla is crispy.
- Remove from the skillet and repeat the process with the remaining ingredients to make a second quesadilla.
- Cut the quesadillas into wedges and serve with extra BBQ sauce on the side for dipping.
