Ingredients

  • Cooked chicken breast, shredded - 200 grams
  • BBQ sauce - 100 ml
  • Flour tortillas - 4 pieces (20 cm diameter)
  • Shredded cheddar cheese - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Green onions, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the shredded chicken with BBQ sauce, mixing well to ensure the chicken is evenly coated.
  2. Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Place one flour tortilla in the skillet and layer half of the shredded cheddar and mozzarella cheese on one side of the tortilla.
  4. Add half of the BBQ chicken mixture on top of the cheese and sprinkle with chopped green onions.
  5. Fold the tortilla over to create a half-moon shape and cook for 3-4 minutes until the underside is golden brown.
  6. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side until the cheese is melted and the quesadilla is crispy.
  7. Remove from the skillet and repeat the process with the remaining ingredients to make a second quesadilla.
  8. Cut the quesadillas into wedges and serve with extra BBQ sauce on the side for dipping.
