Ingredients

  • Cooked chicken breast, shredded - 200 grams
  • Gluten-free tortillas - 2 pieces
  • BBQ sauce - 60 ml
  • Shredded cheddar cheese - 100 grams
  • Red onion, thinly sliced - 50 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the shredded chicken, BBQ sauce, salt, and black pepper. Stir until the chicken is evenly coated.
  2. Heat a non-stick skillet over medium heat and add the olive oil.
  3. Place one gluten-free tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
  4. Spread half of the BBQ chicken mixture over the cheese, followed by half of the sliced red onion and half of the chopped cilantro.
  5. Top with another layer of shredded cheddar cheese and place the second tortilla on top.
  6. Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and the cheese has started to melt.
  7. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes until the second side is golden and the cheese is fully melted.
  8. Remove from the skillet and let it cool for a minute before slicing into wedges. Serve warm with additional BBQ sauce or cilantro if desired.
