- Cooked chicken breast, shredded - 200 grams
- Gluten-free tortillas - 2 pieces
- BBQ sauce - 60 ml
- Shredded cheddar cheese - 100 grams
- Red onion, thinly sliced - 50 grams
- Fresh cilantro, chopped - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a mixing bowl, combine the shredded chicken, BBQ sauce, salt, and black pepper. Stir until the chicken is evenly coated.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Place one gluten-free tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
- Spread half of the BBQ chicken mixture over the cheese, followed by half of the sliced red onion and half of the chopped cilantro.
- Top with another layer of shredded cheddar cheese and place the second tortilla on top.
- Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and the cheese has started to melt.
- Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes until the second side is golden and the cheese is fully melted.
- Remove from the skillet and let it cool for a minute before slicing into wedges. Serve warm with additional BBQ sauce or cilantro if desired.
