- Chicken breast - 300 grams
- BBQ sauce - 100 grams
- Bell pepper (red) - 1 medium
- Bell pepper (green) - 1 medium
- Onion (medium) - 1
- Olive oil - 1 tablespoon
- Gluten-free tortillas - 4
- Cilantro (fresh) - 2 tablespoons, chopped
- Lime - 1
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your grill or grill pan over medium-high heat.
- Slice the chicken breast into thin strips and season with salt, black pepper, and half of the BBQ sauce.
- Grill the chicken for about 5-7 minutes, turning occasionally, until cooked through and slightly charred.
- While the chicken is grilling, slice the bell peppers and onion into thin strips.
- In a large skillet, heat the olive oil over medium heat and add the sliced vegetables. Sauté for about 5-7 minutes until they are tender and slightly caramelized.
- Once the chicken is done, remove it from the grill and toss it with the remaining BBQ sauce.
- Warm the gluten-free tortillas in a dry skillet or microwave for a few seconds until pliable.
- Assemble the fajitas by placing the BBQ chicken and sautéed vegetables on each tortilla. Top with chopped cilantro and a squeeze of lime juice.
- Fold the tortillas and serve immediately.
