Ingredients

  • Chicken breast - 300 grams
  • BBQ sauce - 100 grams
  • Bell pepper (red) - 1 medium
  • Bell pepper (green) - 1 medium
  • Onion (medium) - 1
  • Olive oil - 1 tablespoon
  • Gluten-free tortillas - 4
  • Cilantro (fresh) - 2 tablespoons, chopped
  • Lime - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. Slice the chicken breast into thin strips and season with salt, black pepper, and half of the BBQ sauce.
  3. Grill the chicken for about 5-7 minutes, turning occasionally, until cooked through and slightly charred.
  4. While the chicken is grilling, slice the bell peppers and onion into thin strips.
  5. In a large skillet, heat the olive oil over medium heat and add the sliced vegetables. Sauté for about 5-7 minutes until they are tender and slightly caramelized.
  6. Once the chicken is done, remove it from the grill and toss it with the remaining BBQ sauce.
  7. Warm the gluten-free tortillas in a dry skillet or microwave for a few seconds until pliable.
  8. Assemble the fajitas by placing the BBQ chicken and sautéed vegetables on each tortilla. Top with chopped cilantro and a squeeze of lime juice.
  9. Fold the tortillas and serve immediately.
