Ingredients

  • Cauliflower - 1 medium head, cut into florets
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • BBQ sauce - 1/2 cup
  • Corn tortillas - 4 small
  • Red cabbage - 1 cup, shredded
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until well coated.
  3. Spread the seasoned cauliflower florets in a single layer on a baking sheet lined with parchment paper.
  4. Roast the cauliflower in the preheated oven for 20-25 minutes, stirring halfway through, until tender and slightly charred.
  5. Remove the cauliflower from the oven and toss it with the BBQ sauce until evenly coated.
  6. Return the BBQ-coated cauliflower to the oven and roast for an additional 5 minutes.
  7. While the cauliflower is roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  8. To assemble the tacos, place a generous portion of BBQ cauliflower on each tortilla, top with shredded red cabbage and chopped cilantro.
  9. Serve with lime wedges on the side for squeezing over the tacos.
