  • Canned black beans - 1 can (400g), drained and rinsed
  • BBQ sauce - 4 tablespoons
  • Corn tortillas - 4 small (6-inch)
  • Avocado - 1 medium, sliced
  • Red cabbage - 1 cup, thinly sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Olive oil - 1 tablespoon

Steps

  1. In a medium skillet, heat the olive oil over medium heat.
  2. Add the drained black beans to the skillet and pour in the BBQ sauce. Stir to combine and cook for about 5 minutes, until heated through.
  3. While the beans are cooking, warm the corn tortillas in a separate skillet over low heat for about 1-2 minutes on each side until pliable.
