  • cooked black beans - 400 grams

  • cooked quinoa - 150 grams
  • corn kernels - 100 grams
  • red bell pepper - 1, diced
  • red onion - 1/2, sliced
  • avocado - 1, diced
  • fresh cilantro - 2 tablespoons, chopped
  • lime - 1, juiced
  • olive oil - 1 tablespoon
  • salt - to taste
  • pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the red onion and bell pepper, sautéing until softened, about 5 minutes.
