- Pistachios, shelled - 1/4 cup (30g)
- Cashews, unsalted - 1/4 cup (30g)
- Dried cranberries - 2 tablespoons (30g)
- Fresh parsley, chopped - 2 tablespoons (8g)
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the water is absorbed and the rice is tender.
- While the rice is cooking, heat olive oil in a small skillet over medium heat. Add the sliced almonds, pistachios, and cashews, and toast for about 3-4 minutes until golden and fragrant, stirring frequently.
