Ingredients

  • Basmati rice - 1/2 cup (90g)
  • Water - 1 1/2 cups (360ml)
  • Almond milk - 1 1/2 cups (360ml)
  • Honey or maple syrup - 3 tablespoons (45ml)
  • Vanilla extract - 1 teaspoon (5ml)
  • Ground cinnamon - 1/2 teaspoon (2g)
  • Salt - 1/4 teaspoon (1g)
  • Chopped nuts (e.g., almonds, pistachios) - 2 tablespoons (30g)
  • Raisins or dried fruit - 2 tablespoons (30g)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed basmati rice and water, and bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes or until the rice is tender and water is absorbed.
  4. Stir in the almond milk, honey or maple syrup, vanilla extract, ground cinnamon, and salt into the cooked rice.
  5. Increase the heat to medium and cook the mixture, stirring frequently, for about 10 minutes or until it thickens to a creamy consistency.
  6. Remove from heat and let it cool for a few minutes before serving.
  7. Serve the rice pudding warm or chilled, garnished with chopped nuts and raisins or dried fruit.
