- Cherry tomatoes - 100 grams, halved
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the barley pasta according to package instructions until al dente, usually about 10-12 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained pasta to the skillet with the spinach and tomatoes, tossing to combine.
- If the mixture seems dry, add a little of the reserved pasta water to reach the desired consistency.
- Season with salt, black pepper, red pepper flakes (if using), and lemon juice.
- Serve warm, topped with grated Parmesan cheese.
