- Water - 2 cups (480ml)
- Black beans - 1 can (400g), drained and rinsed
- Corn - 1 cup (150g), frozen or canned
- Red bell pepper - 1 medium, diced
- Red onion - 1/2 medium, diced
- Barbecue sauce - 1/2 cup (120ml)
- Olive oil - 1 tablespoon (15ml)
- Lime - 1, juiced
- Salt - 1/2 teaspoon (3g)
- Pepper - 1/4 teaspoon (1g)
- Fresh cilantro - 1/4 cup (15g), chopped (optional)
Steps
- Rinse the quinoa under cold water and combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until all the water is absorbed.
- While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the diced red onion and red bell pepper, sautéing for about 5 minutes until they are softened.
- Stir in the black beans and corn, cooking for an additional 3-4 minutes until heated through.
- Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetables. Pour in the barbecue sauce, lime juice, salt, and pepper, mixing well to combine everything evenly.
- Cook for another 2-3 minutes until everything is heated through, then remove from heat.
- Serve the barbecue quinoa bowl warm, garnished with fresh cilantro if desired.
