Ingredients

  • young green jackfruit in water - 400 grams
  • olive oil - 1 tablespoon
  • onion, finely chopped - 1 medium
  • garlic, minced - 2 cloves
  • smoked paprika - 1 teaspoon
  • ground cumin - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • salt - 1/2 teaspoon
  • barbecue sauce - 100 ml
  • apple cider vinegar - 1 tablespoon
  • water - 100 ml
  • whole grain burger buns - 2

Steps

  1. Drain and rinse the jackfruit under cold water, then chop it into smaller pieces, removing any seeds if necessary.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the smoked paprika, ground cumin, black pepper, and salt. Cook for another minute to toast the spices.
  5. Add the chopped jackfruit to the skillet and stir to coat it with the spices.
  6. Pour in the barbecue sauce, apple cider vinegar, and water. Mix well and bring to a simmer.
  7. Reduce the heat to low, cover the skillet, and let it cook for about 30 minutes, stirring occasionally, until the jackfruit is tender and can be shredded easily with a fork.
  8. Remove the skillet from heat and use two forks to shred the jackfruit into a pulled texture.
  9. Serve the pulled jackfruit on whole grain burger buns, adding extra barbecue sauce if desired.
