- Black pepper - 1/2 teaspoon
- Apple cider vinegar - 2 tablespoons
- BBQ sauce - 100 grams
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 150°C (300°F).
- In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, and black pepper to create a dry rub.
- Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat.
- Rub the dry mix all over the pork belly, ensuring it gets into the scored areas.
- Place the pork belly in a roasting pan, skin side up, and drizzle with olive oil.
- Cover the pan tightly with aluminum foil and roast in the oven for 2 hours.
- After 2 hours, remove the foil and increase the oven temperature to 220°C (425°F).
- Mix the apple cider vinegar with the BBQ sauce and brush it generously over the pork belly.
- Return the pork belly to the oven uncovered and roast for an additional 30 minutes or until the skin is crispy and caramelized.
- Remove from the oven and let it rest for 10 minutes before slicing and serving.
