Ingredients

  • Pork belly - 500 grams
  • Brown sugar - 2 tablespoons
  • Paprika - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Apple cider vinegar - 2 tablespoons
  • BBQ sauce - 100 grams
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, and black pepper to create a dry rub.
  3. Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat.
  4. Rub the dry mix all over the pork belly, ensuring it gets into the scored areas.
  5. Place the pork belly in a roasting pan, skin side up, and drizzle with olive oil.
  6. Cover the pan tightly with aluminum foil and roast in the oven for 2 hours.
  7. After 2 hours, remove the foil and increase the oven temperature to 220°C (425°F).
  8. Mix the apple cider vinegar with the BBQ sauce and brush it generously over the pork belly.
  9. Return the pork belly to the oven uncovered and roast for an additional 30 minutes or until the skin is crispy and caramelized.
  10. Remove from the oven and let it rest for 10 minutes before slicing and serving.
