Ingredients

  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, julienned
  • Cucumber - 1 small, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Jalapeño - 1, thinly sliced
  • Mayonnaise - 2 tablespoons (preferably light)
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, combine soy sauce, honey, rice vinegar, minced garlic, salt, and pepper to create the marinade for the chicken.
  2. Add the sliced chicken breast to the marinade and let it sit for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by julienning the carrot, slicing the cucumber, and chopping the cilantro. Set aside.
  4. Heat a grill pan or skillet over medium-high heat and cook the marinated chicken for about 6-8 minutes on each side, or until fully cooked and golden brown.
  5. While the chicken is cooking, mix the mayonnaise with lime juice in a small bowl to create a zesty sauce.
  6. Once the chicken is cooked, slice it into strips.
  7. Cut the baguette in half lengthwise and lightly toast it if desired.
  8. Spread the lime mayonnaise on both halves of the baguette.
