- Soy sauce - 2 tablespoons
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Carrot - 1 small, julienned
- Cucumber - 1 small, sliced
- Fresh cilantro - 1/4 cup, chopped
- Jalapeño - 1, thinly sliced
- Mayonnaise - 2 tablespoons (preferably light)
- Lime juice - 1 tablespoon
- Salt - to taste

Steps
- In a bowl, combine soy sauce, honey, rice vinegar, minced garlic, salt, and pepper to create the marinade for the chicken.
- Add the sliced chicken breast to the marinade and let it sit for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by julienning the carrot, slicing the cucumber, and chopping the cilantro. Set aside.
- Heat a grill pan or skillet over medium-high heat and cook the marinated chicken for about 6-8 minutes on each side, or until fully cooked and golden brown.
- While the chicken is cooking, mix the mayonnaise with lime juice in a small bowl to create a zesty sauce.
- Once the chicken is cooked, slice it into strips.
- Cut the baguette in half lengthwise and lightly toast it if desired.
- Spread the lime mayonnaise on both halves of the baguette.
- Layer the grilled chicken strips, followed by the julienned carrot, cucumber slices, jalapeños, and chopped cilantro.
- Close the sandwich, cut in half if desired, and serve immediately.
