- Beef or vegetable broth - 200 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Peel and chop the potatoes into even-sized chunks, then place them in a pot of salted boiling water. Cook for about 15-20 minutes, or until tender.
- While the potatoes are cooking, heat olive oil in a skillet over medium heat. Add the sliced onion and cook until soft and caramelized, about 10 minutes.
- Add minced garlic to the onions and cook for an additional minute until fragrant.
- Pour in the broth to the skillet, bring to a simmer and let it reduce slightly, stirring occasionally.
- In another pan, cook the chicken sausages according to package instructions until browned and cooked through.
- Once the potatoes are done, drain them and return to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste.
