  • ripe bananas - 2 medium
  • whole wheat flour - 1 cup (120g)
  • baking powder - 1 teaspoon

  • salt - 1/4 teaspoon
  • milk (or non-dairy alternative) - 3/4 cup (180ml)
  • egg - 1 large
  • vanilla extract - 1 teaspoon
  • coconut oil (for cooking) - 1 tablespoon

Steps

  1. In a mixing bowl, mash the ripe bananas until smooth.
  2. Add the milk, egg, and vanilla extract to the mashed bananas and whisk until combined.
  3. In a separate bowl, mix together the whole wheat flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined; do not overmix.
  5. Heat a non-stick skillet or griddle over medium heat and add the coconut oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
