Ingredients

  • ripe bananas - 2 medium
  • all-purpose flour - 1 cup (120g)
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • ground cinnamon - 1/2 tsp
  • maple syrup - 1/4 cup (60ml)
  • almond milk - 1/4 cup (60ml)
  • coconut oil - 2 tbsp (30ml), melted
  • vanilla extract - 1 tsp
  • chopped walnuts - 1/4 cup (30g)

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the maple syrup, almond milk, melted coconut oil, and vanilla extract to the mashed bananas, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Fold in the chopped walnuts gently into the batter.
  7. Divide the batter evenly among the prepared muffin tins, filling each cup about 3/4 full.
  8. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
