- ripe bananas - 2 medium
- all-purpose flour - 1 cup (120g)
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/4 tsp
- ground cinnamon - 1/2 tsp
- maple syrup - 1/4 cup (60ml)
- almond milk - 1/4 cup (60ml)
- coconut oil - 2 tbsp (30ml), melted
- vanilla extract - 1 tsp
- chopped walnuts - 1/4 cup (30g)
Steps
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, mash the ripe bananas until smooth.
- Add the maple syrup, almond milk, melted coconut oil, and vanilla extract to the mashed bananas, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Fold in the chopped walnuts gently into the batter.
- Divide the batter evenly among the prepared muffin tins, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
