  • Ripe bananas - 2 medium
  • Unsalted butter - 30 grams
  • Brown sugar - 50 grams
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Halal rum (or apple juice) - 30 ml
  • Vanilla ice cream - 2 scoops
  • Chopped walnuts - 20 grams (optional)

Steps

  1. Peel the bananas and slice them in half lengthwise.
  2. In a skillet over medium heat, melt the unsalted butter.
  3. Add the brown sugar and cinnamon to the melted butter, stirring until the sugar dissolves and the mixture is bubbling.
  4. Carefully add the banana halves cut-side down into the skillet, cooking for about 1-2 minutes until they start to caramelize.
  5. Gently flip the bananas and cook for another 1-2 minutes on the other side.
  6. Add the vanilla extract and halal rum (or apple juice) to the skillet, allowing the mixture to bubble and thicken for an additional minute.
  7. Remove the skillet from heat and let it cool slightly.
  8. To serve, place a scoop of vanilla ice cream in a bowl, top with the caramelized banana mixture, and sprinkle with chopped walnuts if desired.
