- ripe bananas - 2 medium
- gluten-free all-purpose flour - 1 cup (120g)
- baking powder - 1 teaspoon
- baking soda - 1/2 teaspoon
- salt - 1/4 teaspoon
- honey - 2 tablespoons
- eggs - 1 large
- vanilla extract - 1 teaspoon
- coconut oil - 2 tablespoons (melted)
- chopped walnuts - 1/4 cup (optional)
Steps
- Preheat your oven to 175°C (350°F) and grease a small loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add the honey, egg, melted coconut oil, and vanilla extract to the mashed bananas, and mix well.
- In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
