Ingredients

  • ripe bananas - 2 medium
  • gluten-free all-purpose flour - 1 cup (120g)
  • baking powder - 1 teaspoon
  • baking soda - 1/2 teaspoon
  • salt - 1/4 teaspoon
  • honey - 2 tablespoons
  • eggs - 1 large
  • vanilla extract - 1 teaspoon
  • coconut oil - 2 tablespoons (melted)
  • chopped walnuts - 1/4 cup (optional)

Steps

  1. Preheat your oven to 175°C (350°F) and grease a small loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the honey, egg, melted coconut oil, and vanilla extract to the mashed bananas, and mix well.
  4. In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
