- Quinoa - 1 cup (170g)
- Water - 2 cups (480ml)
- Red bell pepper - 1 (150g), diced
- Zucchini - 1 medium (200g), diced
- Red onion - 1 small (100g), diced
- Cherry tomatoes - 1 cup (150g), halved
- Olive oil - 2 tablespoons (30ml)
- Balsamic vinegar - 3 tablespoons (45ml)
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Fresh basil - 1/4 cup (10g), chopped
- Feta cheese - 1/4 cup (40g), crumbled (optional)
Steps
- Preheat the oven to 220°C (425°F).
- Rinse the quinoa under cold water and then combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- In a large mixing bowl, combine the diced red bell pepper, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil and balsamic vinegar, then add minced garlic, salt, and black pepper. Toss to coat the vegetables evenly.
- Spread the seasoned vegetables onto a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
- Fluff the cooked quinoa with a fork and transfer it to a large bowl. Add the roasted vegetables and chopped fresh basil. Mix gently to combine.
- If using, sprinkle the crumbled feta cheese on top before serving. Enjoy your salad warm or at room temperature.
