Ingredients

  • Beets - 2 medium (about 300g)
  • Olive oil - 2 tablespoons (30ml)
  • Balsamic vinegar - 1 tablespoon (15ml)
  • Honey - 1 teaspoon (5g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Fresh thyme - 1 teaspoon (2g), optional

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the beets thoroughly, then trim the tops and roots, leaving about 1 inch of stem to prevent bleeding.
  3. Wrap each beet individually in aluminum foil and place them on a baking sheet.
  4. Roast the beets in the preheated oven for 30-40 minutes, or until a fork easily pierces through them.
  5. Once cooked, remove the beets from the oven and let them cool for about 10 minutes.
  6. Peel the beets (the skin should come off easily) and cut them into wedges.
  7. In a mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and black pepper.
  8. Add the beet wedges to the bowl and gently toss until they are well coated with the dressing.
  9. Transfer the beets to a serving dish, sprinkle with fresh thyme if desired, and serve warm.
