- Balsamic vinegar - 1 tablespoon (15ml)
- Honey - 1 teaspoon (5g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Fresh thyme - 1 teaspoon (2g), optional
Steps
- Preheat the oven to 200°C (400°F).
- Wash the beets thoroughly, then trim the tops and roots, leaving about 1 inch of stem to prevent bleeding.
- Wrap each beet individually in aluminum foil and place them on a baking sheet.
- Roast the beets in the preheated oven for 30-40 minutes, or until a fork easily pierces through them.
- Once cooked, remove the beets from the oven and let them cool for about 10 minutes.
- Peel the beets (the skin should come off easily) and cut them into wedges.
- In a mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and black pepper.
- Add the beet wedges to the bowl and gently toss until they are well coated with the dressing.
