Ingredients

  • Zucchini - 250 grams, grated
  • All-purpose flour - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Green onion - 2 stalks, finely chopped
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine grated zucchini with a pinch of salt and let it sit for about 10 minutes to draw out moisture.
  3. After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove excess water.
  4. In the same bowl, add the flour, Parmesan cheese, chopped green onion, egg, garlic powder, dried oregano, salt, and black pepper.
  5. Mix all the ingredients together until well combined.
  6. Using your hands, form the mixture into small patties and place them on the prepared baking sheet.
  7. Drizzle the olive oil over the fritters.
  8. Bake in the preheated oven for 20 minutes, flipping halfway through, until golden brown and crispy.
