- Parmesan cheese - 30 grams, grated
- Green onion - 2 stalks, finely chopped
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, combine grated zucchini with a pinch of salt and let it sit for about 10 minutes to draw out moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove excess water.
- In the same bowl, add the flour, Parmesan cheese, chopped green onion, egg, garlic powder, dried oregano, salt, and black pepper.
- Mix all the ingredients together until well combined.
- Using your hands, form the mixture into small patties and place them on the prepared baking sheet.
