  • Zucchini - 2 medium
  • All-purpose flour - 1/2 cup
  • Egg - 1 large
  • Bread crumbs - 1 cup
  • Parmesan cheese - 1/4 cup, grated
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Wash and slice the zucchini into thin strips, about 1 cm thick.
  3. In one bowl, place the all-purpose flour. In a second bowl, beat the egg. In a third bowl, mix the bread crumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  4. Dip each zucchini strip first in the flour, shaking off the excess, then in the egg, and finally coat with the bread crumb mixture.
  5. Place the coated zucchini fries onto the prepared baking sheet in a single layer.
  6. Drizzle olive oil over the fries for added crispiness.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  8. Remove from the oven and allow to cool slightly before serving.
