Ingredients
- Zucchini - 2 medium (about 300g)
- Cooked green or brown lentils - 1 cup (240g)
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon (15ml)
- Vegetable broth - 1/2 cup (120ml)
- Dried thyme - 1 teaspoon (5g)
- Dried oregano - 1 teaspoon (5g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Breadcrumbs - 1/4 cup (30g)
- Parmesan cheese - 2 tablespoons (15g), grated
- Fresh parsley - 2 tablespoons (8g), chopped
Steps
- Preheat the oven to 190°C (375°F).
- Slice the zucchini into thin rounds and set aside.
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.
- In a large bowl, combine cooked lentils, sautéed onion and garlic, thyme, oregano, salt, and pepper. Mix well.
- In a greased 9-inch (23 cm) baking dish, layer half of the zucchini slices at the bottom.
- Spread the lentil mixture evenly over the zucchini layer.
- Top with the remaining zucchini slices.
- Pour vegetable broth over the entire casserole.
- In a small bowl, mix breadcrumbs, grated Parmesan cheese, and chopped parsley. Sprinkle this mixture evenly over the top of the casserole.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
- Allow to cool for 5 minutes before serving.
