Ingredients

  • Zucchini - 2 medium (about 300g)
  • Cooked green or brown lentils - 1 cup (240g)
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon (15ml)
  • Vegetable broth - 1/2 cup (120ml)
  • Dried thyme - 1 teaspoon (5g)
  • Dried oregano - 1 teaspoon (5g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Breadcrumbs - 1/4 cup (30g)
  • Parmesan cheese - 2 tablespoons (15g), grated
  • Fresh parsley - 2 tablespoons (8g), chopped

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the zucchini into thin rounds and set aside.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.
  4. In a large bowl, combine cooked lentils, sautéed onion and garlic, thyme, oregano, salt, and pepper. Mix well.
  5. In a greased 9-inch (23 cm) baking dish, layer half of the zucchini slices at the bottom.
  6. Spread the lentil mixture evenly over the zucchini layer.
  7. Top with the remaining zucchini slices.
  8. Pour vegetable broth over the entire casserole.
  9. In a small bowl, mix breadcrumbs, grated Parmesan cheese, and chopped parsley. Sprinkle this mixture evenly over the top of the casserole.
  10. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
  11. Allow to cool for 5 minutes before serving.
