- Zucchini - 2 medium (about 300g)
- Cooked lentils - 1 cup (about 200g)
- Canned chickpeas - 1 cup (about 240g), rinsed and drained
- Onion - 1 small (about 100g), diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Ground cumin - 1 teaspoon
- Ground paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Shredded mozzarella cheese - 1 cup (about 100g)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 190°C (375°F).
- Slice the zucchini into thin rounds and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft.
- Add the minced garlic, cumin, paprika, salt, and black pepper, and cook for an additional minute until fragrant.
- Stir in the cooked lentils and chickpeas, and mix until well combined. Remove from heat.
- In a baking dish, layer half of the zucchini slices on the bottom. Spread the lentil and chickpea mixture over the zucchini, then layer the remaining zucchini on top.
- Sprinkle the shredded mozzarella cheese evenly over the top layer of zucchini.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped parsley.
