- Zucchini - 2 medium (about 400g)
- Onion - 1 small (about 100g), finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon (15ml)
- Egg - 1 large
- Shredded mozzarella cheese - 1 cup (100g)
- Grated Parmesan cheese - 1/4 cup (25g)
- Bread crumbs - 1/4 cup (30g)
- Fresh basil - 1 tablespoon, chopped (or 1 teaspoon dried)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Wash and slice the zucchini into thin rounds.
- In a skillet, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent (about 3-4 minutes).
- Add the minced garlic and zucchini slices to the skillet, cook for another 5-7 minutes until the zucchini is slightly tender, then remove from heat.
- In a mixing bowl, beat the egg, then stir in the mozzarella cheese, Parmesan cheese, bread crumbs, basil, salt, and pepper.
- Add the sautéed zucchini mixture to the cheese mixture and stir until well combined.
- Transfer the mixture to a small greased baking dish (about 20x15cm) and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is set.
- Remove from the oven and let it cool for a few minutes before serving.
