Ingredients

  • Zucchini - 2 medium (about 400g)
  • Onion - 1 small (about 100g), finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon (15ml)
  • Egg - 1 large
  • Shredded mozzarella cheese - 1 cup (100g)
  • Grated Parmesan cheese - 1/4 cup (25g)
  • Bread crumbs - 1/4 cup (30g)
  • Fresh basil - 1 tablespoon, chopped (or 1 teaspoon dried)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and slice the zucchini into thin rounds.
  3. In a skillet, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent (about 3-4 minutes).
  4. Add the minced garlic and zucchini slices to the skillet, cook for another 5-7 minutes until the zucchini is slightly tender, then remove from heat.
  5. In a mixing bowl, beat the egg, then stir in the mozzarella cheese, Parmesan cheese, bread crumbs, basil, salt, and pepper.
  6. Add the sautéed zucchini mixture to the cheese mixture and stir until well combined.
  7. Transfer the mixture to a small greased baking dish (about 20x15cm) and spread it evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is set.
  9. Remove from the oven and let it cool for a few minutes before serving.
