Ingredients
- 2 medium zucchinis
- 1 cup cherry tomatoes, halved
- 1/2 cup bell pepper, diced
- 1/2 cup onion, finely chopped
- 1/2 cup corn (fresh or frozen)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
- Fresh basil, for garnish (optional)
Steps
- Preheat your oven to 190°C (375°F).
- Slice the zucchinis in half lengthwise and scoop out the center using a spoon, creating a boat shape. Leave about 0.5 cm of flesh on the sides.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they start to soften.
- Add the cherry tomatoes, corn, garlic powder, oregano, salt, and pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
- Remove the skillet from heat and mix in the mozzarella and Parmesan cheeses until well combined.
- Fill each zucchini half with the vegetable and cheese mixture, pressing down lightly to pack it in.
- Place the stuffed zucchinis on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired before serving.
