Ingredients

  • 2 medium zucchinis
  • 1 cup cherry tomatoes, halved
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, finely chopped
  • 1/2 cup corn (fresh or frozen)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil, for garnish (optional)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Slice the zucchinis in half lengthwise and scoop out the center using a spoon, creating a boat shape. Leave about 0.5 cm of flesh on the sides.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they start to soften.
  4. Add the cherry tomatoes, corn, garlic powder, oregano, salt, and pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
  5. Remove the skillet from heat and mix in the mozzarella and Parmesan cheeses until well combined.
  6. Fill each zucchini half with the vegetable and cheese mixture, pressing down lightly to pack it in.
  7. Place the stuffed zucchinis on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired before serving.
