Ingredients

  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Red bell pepper - 50 grams, finely diced
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Egg - 1 large
  • All-purpose flour - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated zucchini, grated carrot, diced red bell pepper, chopped green onion, and minced garlic.
  3. Add the egg to the vegetable mixture and stir until well combined.
  4. Sprinkle in the flour, grated Parmesan cheese, crumbled feta cheese, chopped parsley, chopped dill, cumin, paprika, salt, and black pepper. Mix until everything is evenly incorporated.
  5. Using your hands, form the mixture into small fritters, about 5 cm in diameter, and place them on the prepared baking sheet.
  6. Brush the tops of the fritters lightly with olive oil.
  7. Bake in the preheated oven for 20 minutes, flipping them halfway through, until they are golden brown and crispy.
