- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, finely diced
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Egg - 1 large
- All-purpose flour - 50 grams
- Grated Parmesan cheese - 30 grams
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the grated zucchini, grated carrot, diced red bell pepper, chopped green onion, and minced garlic.
- Add the egg to the vegetable mixture and stir until well combined.
- Sprinkle in the flour, grated Parmesan cheese, crumbled feta cheese, chopped parsley, chopped dill, cumin, paprika, salt, and black pepper. Mix until everything is evenly incorporated.
- Using your hands, form the mixture into small fritters, about 5 cm in diameter, and place them on the prepared baking sheet.
- Brush the tops of the fritters lightly with olive oil.
- Bake in the preheated oven for 20 minutes, flipping them halfway through, until they are golden brown and crispy.
- Remove from the oven and let them cool for a few minutes before serving.
