- Red bell pepper - 75 grams, finely chopped
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Egg - 1 large
- All-purpose flour - 50 grams
- Parmesan cheese - 50 grams, grated
- Mozzarella cheese - 50 grams, shredded
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, chopped green onion, and minced garlic.
- Add the egg, flour, Parmesan cheese, mozzarella cheese, salt, black pepper, paprika, and chopped parsley to the vegetable mixture. Mix until everything is well combined.
- Using your hands, form the mixture into small fritters, about 5 cm in diameter, and place them on the prepared baking sheet.
