Ingredients

  • Trout fillets - 2 pieces (approx. 150g each)
  • Almonds, sliced - 50g
  • Butter - 50g
  • Garlic, minced - 1 clove
  • Lemon juice - 2 tablespoons
  • Parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a small skillet, melt 25g of butter over medium heat. Add the sliced almonds and toast them until golden brown, stirring frequently, about 3-4 minutes. Remove from heat and set aside.
  3. In a separate bowl, combine the remaining melted butter, minced garlic, lemon juice, chopped parsley, salt, and pepper.
  4. Place the trout fillets skin-side down on a baking sheet lined with parchment paper. Drizzle the lemon-butter mixture evenly over the fillets.
  5. Sprinkle the toasted almonds on top of the trout fillets, pressing them gently to adhere.
  6. Bake in the preheated oven for 15-20 minutes, or until the trout flakes easily with a fork and is cooked through.
  7. Remove from the oven and let it rest for a few minutes before serving. Garnish with additional parsley if desired.
