  • Black beans - 1 cup (cooked)
  • Corn tortillas - 4
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Enchilada sauce - 1 cup
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Shredded cheese (optional) - 1/2 cup

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Peel and cube the sweet potato, then boil in a pot of water for about 10-15 minutes until tender. Drain and mash.
  3. In a skillet, heat olive oil over medium heat. Sauté the diced red onion and minced garlic until translucent, about 3-4 minutes.
  4. Add the cooked black beans, mashed sweet potato, cumin, chili powder, and salt to the skillet. Mix well and cook for an additional 2-3 minutes to combine the flavors.
  5. Warm the corn tortillas in a dry skillet or microwave to make them pliable.
  6. Spoon the sweet potato and black bean mixture into each tortilla, roll them up, and place seam side down in a baking dish.
  7. Pour the enchilada sauce evenly over the rolled tortillas and sprinkle with shredded cheese if using.
  8. Bake in the preheated oven for 20-25 minutes until heated through and cheese is melted.
  9. Remove from the oven, garnish with fresh cilantro and a squeeze of lime juice before serving.
