Ingredients

  • Sweet potatoes - 2 medium (about 400g)
  • Canned black beans - 1 cup (240g), drained and rinsed
  • Olive oil - 2 tablespoons (30ml)
  • Cumin - 1 teaspoon (2g)
  • Smoked paprika - 1 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Corn - 1/2 cup (75g), frozen or canned
  • Avocado - 1 medium, diced
  • Fresh cilantro - 1/4 cup (15g), chopped
  • Lime - 1, juiced
  • Feta cheese - 1/4 cup (30g), crumbled (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and pierce the sweet potatoes with a fork several times. Place them on a baking sheet lined with parchment paper.
  3. Bake the sweet potatoes in the preheated oven for 30-35 minutes, or until tender.
  4. While the sweet potatoes are baking, prepare the black bean mixture. In a skillet over medium heat, add olive oil, cumin, smoked paprika, salt, and black pepper.
  5. Add the drained black beans and corn to the skillet, stirring to combine. Cook for 5-7 minutes until heated through.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise.
  7. Scoop out a little of the flesh to create a small bowl and mix it with the black bean mixture.
  8. Spoon the black bean and corn mixture back into the sweet potato halves.
  9. Top with diced avocado, chopped cilantro, and a squeeze of lime juice. If desired, sprinkle with crumbled feta cheese.
