Ingredients
- Sweet potatoes - 2 medium (about 400g)
- Canned black beans - 1 cup (240g), drained and rinsed
- Olive oil - 2 tablespoons (30ml)
- Cumin - 1 teaspoon (2g)
- Smoked paprika - 1 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Corn - 1/2 cup (75g), frozen or canned
- Avocado - 1 medium, diced
- Fresh cilantro - 1/4 cup (15g), chopped
- Lime - 1, juiced
- Feta cheese - 1/4 cup (30g), crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash and pierce the sweet potatoes with a fork several times. Place them on a baking sheet lined with parchment paper.
- Bake the sweet potatoes in the preheated oven for 30-35 minutes, or until tender.
- While the sweet potatoes are baking, prepare the black bean mixture. In a skillet over medium heat, add olive oil, cumin, smoked paprika, salt, and black pepper.
- Add the drained black beans and corn to the skillet, stirring to combine. Cook for 5-7 minutes until heated through.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise.
- Scoop out a little of the flesh to create a small bowl and mix it with the black bean mixture.
- Spoon the black bean and corn mixture back into the sweet potato halves.
- Top with diced avocado, chopped cilantro, and a squeeze of lime juice. If desired, sprinkle with crumbled feta cheese.
