- Breadcrumbs - 1/2 cup (60g)
- Onion, finely chopped - 1/4 cup (40g)
- Celery, finely chopped - 1/4 cup (30g)
- Carrot, grated - 1/4 cup (30g)
- Fresh parsley, chopped - 2 tablespoons (8g)
- Fresh dill, chopped - 1 tablespoon (4g)
- Garlic, minced - 1 clove
- Lemon juice - 1 tablespoon (15ml)
- Olive oil - 2 tablespoons (30ml)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Vegetable broth - 1/4 cup (60ml)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, celery, and carrot, and sauté until softened, about 5 minutes.
- Stir in the garlic, parsley, dill, salt, pepper, and paprika. Cook for another 2 minutes.
- Remove from heat and mix in the breadcrumbs and lemon juice until well combined.
- Place the flounder fillets on a baking dish, skin side down. Gently spoon the stuffing mixture onto each fillet, pressing down lightly to adhere.
- Drizzle the remaining olive oil over the stuffed fillets and pour the vegetable broth into the baking dish.
- Cover the dish with foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5-10 minutes, until the fish is cooked through and flakes easily with a fork.
- Serve warm, garnished with additional parsley if desired.
