- Black pepper - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Egg - 1 large
- Parmesan cheese - 30 grams, grated (for topping)
- Bread crumbs - 2 tablespoons (optional, for added crunch)
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine crumbled feta cheese, Greek yogurt, lemon juice, black pepper, and salt. Mix well.
- In a separate bowl, beat the egg and then add it to the feta mixture, stirring until fully combined.
- Add the sautéed spinach to the feta mixture and stir until well combined.
